How to Store Biltong So It Stays Fresh (The Right Way)

Good biltong deserves to be treated right. Whether you've just received a Cracklys order or you're stocking up for winter, here's exactly how to keep your biltong at its best.

The Golden Rules

  • Airflow is everything — Biltong needs to breathe. Never seal it in an airtight container for extended periods; it'll sweat and go mouldy. A paper bag or breathable cloth bag is ideal for short-term storage.
  • Room temperature is fine (short-term) — For 3–5 days, a cool, dry spot out of direct sunlight works perfectly.
  • Fridge for longer storage — Wrap loosely in paper (not plastic) and refrigerate for up to 2–3 weeks. The texture may firm up slightly.
  • Freeze for bulk buying — Biltong freezes well. Portion it into paper-wrapped bundles, place in a zip-lock bag, and freeze for up to 3 months. Thaw at room temperature.
  • Watch for moisture — If your biltong feels slimy or smells off, discard it. Properly stored biltong should smell rich and meaty, never sour.
